I'm not judging the ponies (or people, for that matter) simply in terms of how valuable they are to an economy. That's such a cold way of looking at them! There's so much more to them than that... It's what's in their hearts theat matters. Think about the 5 Elements of Harmony (not counting Magic): Honesty, Loyalty, Laughter, Generosity, Kindness... These are what make a person a good person (although all human beings are valuable simply because they're human beings). As for Applejack not going around talking about how great she is all the time, that might be a plus. She's modest, which is a good trait, whereas Rainbow Dash is obnoxiously arrogant.
