Her coat color in the ANG movie probably looks different from her appearance in MYM simply due to lighting differences. In the case of TYT, they probably favor brighter colors, so blueish gray had to go. There probably isn't some special in universe reason for it. This is just my opinion, though, so feel free to ignore it.
