Luna’s “night” begins with everyone else having morning. It also is often a bad idea to eat a big meal right before going to bed, so while it’s not nice, dietary wise, Luna is eating smart.

If you pay attention, you could see how Celestia made pineapple pancakes the next day, just because Luna ate a pineapple.  
She makes you pancakes out of the fruit you eat the previous day.
